oh so warm and delicious spaghetti and meatballs.

We hadn't had spaghetti for a long time, and I was reminded that my love absolutely loves spaghetti and meatballs! I got a great deal on diced tomatoes and they were calling my name so I got to work:

I browned a half pound of grass fed beef, seasoned with salt, pepper, and ground dried garlic. Then I added in two medium cans of diced tomato, a can of tomato paste mixed with about a half cup of water, and lots of oregano. I only used a half pound of beef to give it some flavor, and because I was also adding meatballs, and because I like meat in my sauce, but not meat overload.

Cooked it for quite a while, although I lost track of time on this one and it cooked on low for about two or three hours, only making it better. I cooked the meatballs until they were nicely browned in the oven, then added them to the sauce. Also checking the seasoning, I added a bit more garlic, salt and pepper.

Our favorite spaghetti these days is a whole wheat noodle from Costco. It's made from whole wheat flour and water, but it cooks up like "normal" pasta, without that heavy wheat-y taste. Quite tasty!

Delicious with some grated Pecorino-Romano, absolutely delicious! I actually forgot to buy the baguette, so we made garlic bread with some sliced sourdough. Still tasty! We ate all the spaghetti but had enough sauce left over for lunch. I warmed it up and ate it as is with some nicely toasted sourdough.

  8. I'll have to try this pasta. That's one of my biggest issues with whole wheat pasta is that you can "taste" the difference. I wish you couldn't then my kids wouldn't make the "face" when I serve them something healthy.
