I decided to participate in Taste & Create for the first time. I was paired up with Rachel's Bite, a blog I had yet to read, so I got to go through and find something wonderful to cook and eat! I chose to make the Grilled Salmon with Cellophane Noodles for dinner with Dramatically Seared Green Beans on the side.In the freezer I had some wild salmon caught by a friend of ours. The other reason I chose this recipe was the cellophane noodles, which I had on hand but had never prepared like this. The sauces for this recipe were good and flavorful, and the recipe was simple to prepare. Unfortunately the Oregon rain decided to come thundering down about two hours before I started to cook, so I decided to cook it "blackened style" instead (the recipe called for grilling it). I seasoned the salmon, put it in a very hot oven-safe saute pan for two minutes. Then flipped it over, stuck it in the oven (pre-heated to 425) for about 3 to 4 minutes. In my excitement I forgot to put the glaze on so I added it on for the last minute or two.
The noodles were super simple to prepare. I liked the sauce and can see some nice variations that we can make with this.
I chose the green beans because I love them and I've made them in a similar fashion, but never exactly like this. I happened to find some beautiful green beans, as well as some asparagus, at the grocery store so we were lucky enough to have both vegetables. The directions were perfect for this in the wok. The veggies were cooked but had a great crunch to them, just the way I like them!
It was a great dinner, the family enjoyed it, and we will probably make this again! Thanks Rachel!

This makes me want to go and buy some wild salmon and make it. I never thought to put cellophane noodles with it. Good choice. Will try it and let you know how my family likes this. Thanks for the idea.

ReplyDelete~Karen, it was really good. I've had these noodles before but we like to fry them up and eat them crunchy -- we don't do it often but it's fun to top off the stir fry with. This was nice to try and we will do more variations for sure!! I want to try them hot, this was a cold-ish version.

Hello my good friend. What a delicious looking meal. Actually I like so much I think I'll make some of your grilled salmon for Easter Sunday. We plan on have a small family reunion, so I think adding some salmon to the menu will fit just right. Thanks for the great recipe.
