chicken fajita nachos, a blantant steal

One of my favorite meals is actually an appetizer at my local restaurant. I order it as a meal because it fills me up. It's deceiving in appearance. When I said I was making nachos for our afternoon lunch/snack (late breakfast/early dinner kind of day) and plunked down 10 chips K said "That's all?" Trust me, I said.

Easy & Tasty Fajita Nachos:
  • Your favorite type of tortilla chip, large enough to hold the goods
  • Refried beans
  • Fajita chicken or beef
  • Choice of Cheese
  • Salsa
  • Sour Cream
  • Any other desired taco toppings

Onto each chip put a dollop of nicely warmed refried beans and top that with piece of the chicken. Top with cheese and any other desired toppings, such as olives, diced tomato, etc. Place in oven or toaster oven until cheese is melted.

Serve with sour cream and salsa. Enjoy!
We use Vegetable & Flax chips from Trader Joe's. They are colorful, flavorful, and baked full of whole grains. I usually eat between 4 and 8, K will eat up to 10 if I make them. Although these are called Fajita nachos you can use any leftover chicken or beef. We have chicken a few times a week and this is one of the ways we use it up. Flank steak is also good. Then I top it with sour cream and salsa. I also like that you get a lot of flavor from the chicken or beef. We use a lot of chipotle in our meat marinades and that is a nice bonus here. I like beans, meat, and cheese. The extra goodies are nice too, and can be added before or after melting the cheese.

This has nice flexibility, you can do so much with this simple snack. Since K is not able to have cows milk cheese we use sheeps milk cheese, Ossau-Iraty. I'd say this is a nice and healthier snack. The best part is that is did not cost me $8.99! Gloria is celebrating Fajita Friday tomorrow at Foods and Flavors of Sand Antonio so this is my contribution to the celebration!

  3. We have been eating a lot of nachos lately, especially my husband, it's his favorite snack/lunch. I like the idea of chicken/beef on the nachos. Yum!
